Spice Blend:

  • 3 scotch bonnet peppers
  • 1 medium red onion
  • 1 medium piece of ginger
  • 1 tsp cloves
  • 1 tsp black peppercorns
  • 3 African orchid nutmeg (or substitute with regular nutmeg)
  • 2 spring onions, chopped (for garnish)

Instructions
 

  • Prepare the Spice Blend:
    In a blender, combine the scotch bonnet peppers, red onion, ginger, cloves, black peppercorns, and African orchid nutmeg. Blend until smooth.
  • Mash the Plantains:
    Peel the plantains and cut them into large chunks.
    Place the plantain chunks in a bowl and mash them until smooth.
  • Mix the Ingredients:
    Add the blended spice mixture to the mashed plantains and stir well.
    Season the mixture with salt to taste.
    Gradually add the soft flour and mix until the batter is well combined.
  • Fry the Tatale:
    Heat vegetable oil in a saucepan over medium heat.
    Scoop spoonfuls of the plantain mixture into the hot oil and shallow fry.
    Fry each side for about 2-3 minutes or until golden brown.
    Remove the fried tatale and place them on a paper towel to drain any excess oil.
  • Serve:
    Garnish with chopped spring onions and serve warm.

  • Consistency: The batter should be thick but scoopable to form well-rounded fritters.
