  • Prepare the Sweet Potatoes:
    Preheat your oven to 375°F.
    Bake the sweet potatoes until they are soft, ensuring you pierce them with a knife to prevent bursting.
    This may take up to 1 hour.Once the sweet potatoes are done, reduce the oven temperature to 350°F for the biscuits.
  • Mix the Dough:
    While the sweet potatoes are still hot, measure out 3/4 cup of mashed sweet potatoes and place them in a mixing bowl with the cubed butter. Let the heat from the sweet potatoes melt the butter.
    Add the milk, grated ginger, salt, flour, and baking powder to the bowl. Mix well until the ingredients form a soft dough.
  • Shape the Biscuits:
    Flour a work surface and your hands generously. Press the dough flat until it’s about 1 inch thick.
    Use a floured cookie cutter to cut out the biscuits, preventing the dough from sticking.
  • Bake the Biscuits:
    Place the biscuits on a lined baking sheet, leaving about 2 inches between each biscuit.
    Bake in the preheated oven for 15-20 minutes, or until the biscuits are puffed and golden.

Notes

  • Cold Sweet Potatoes: If using leftover cold sweet potatoes, melt the butter separately before mixing it with the potatoes.
