Ingredients
  

  • 15 ml vegetable oil
  • 2 medium onions, finely sliced
  • 1 clove garlic, crushed
  • 1.25 tsp dried chilli flakes
  • 500 g sweet potatoes, peeled and diced into 1 cm cubes
  • 2 ripe tomatoes, seeded and diced
  • 250 g smoked snoek, bones and skin removed and shredded
  • Juice of 1 small lemon
  • Handful of fresh coriander, finely chopped
  • Salt and pepper to taste

Instructions
 

  • Sauté the Aromatics:
    Heat the vegetable oil in a large pan over medium heat. Add the sliced onions and sauté until softened and glossy, about 5 minutes.Add the crushed garlic and dried chilli flakes, frying for another minute until fragrant.
  • Cook the Sweet Potatoes:
    Add the diced sweet potatoes to the pan, stirring to coat them in the oil and spices.Cover the pan, reduce the heat to low, and cook for about 15 minutes, or until the sweet potatoes are tender.
  • Add the Tomatoes:
    Stir in the diced tomatoes and cook for an additional 5 minutes, allowing the flavors to meld together.
  • Incorporate the Snoek:
    Gently fold in the shredded smoked snoek, cooking for a few minutes until the snoek is heated through.
  • Finish the Dish:
    Stir in the lemon juice and freshly chopped coriander. Season the dish with salt and pepper to taste.
  • Serve:
    Serve the Smoorsnoek hot, with extra lemon slices on the side for an added burst of citrus.
