Pressure Cooker Zobo Drink (Hibiscus Tea)
Zobo Drink, a refreshing hibiscus tea popular in West Africa, is made from dried hibiscus petals, pineapple rind, and ginger. This vibrant red drink is deliciously tangy, slightly sweet, and perfect for serving chilled with ice and fresh fruit slices.

Ingredients
- 2 cup dried hibiscus petals (zobo leaves)
- 10 cup water
- 1 cup granulated sugar
- 1 tsp grated fresh ginger
- Pineapple rind from 1 ripe pineapple
Instructions
- Prepare the Hibiscus:Rinse the dried hibiscus petals thoroughly under cold water to remove any dust or impurities.
- Cook in the Pressure Cooker:Add water, sugar, and grated ginger to the pressure cooker pot. Stir until the sugar is dissolved.Stir in the rinsed hibiscus petals and the pineapple rind.Lock the lid of the pressure cooker in place and select High Pressure with a cook time of 10 minutes.
- Release the Pressure:Once the timer sounds, turn off the pressure cooker and allow a natural pressure release, which may take about 30 minutes.
- Strain the Zobo Drink:Remove the pineapple rinds. Place a fine mesh strainer over a large bowl and pour the liquid through it, discarding the solids.
- Chill and Serve:Pour the strained Zobo drink into a serving container and chill in the refrigerator until ready to serve.Serve over ice with slices of fresh fruit for garnish.
