One-Pot Jollof Rice
This version of Jollof Rice is a one-pot dish that's adaptable to various dietary needs, making it a versatile and allergy-friendly meal. It’s dairy-free, egg-free, gluten-free, nut-free, peanut-free, soy-free, and can easily be made vegan.
Ingredients
- 2 tbsp olive oil
- 1 cup diced onions
- 2 tbsp minced garlic
- 1 tsp minced ginger
- ½ to 1 habanero pepper, thinly sliced
- 1 cup uncooked basmati rice
- 1½ cup vegetable stock (for vegan) or chicken stock
- 1 (15 ounce) can crushed tomatoes
- 1 tsp seasoned salt
- ½ tsp smoked paprika
- ½ tsp curry powder
- ½ tsp dried thyme
- 1 bay leaf
- Chopped parsley, for garnish
Instructions
- Sauté Aromatics:Heat the olive oil in a large pot over medium heat. Add the diced onions and sauté for about 5 minutes until they become tender.
- Add Flavorful Elements:Stir in the minced garlic, ginger, and sliced habanero pepper. Sauté for about 30 seconds until fragrant.
- Toast the Rice:Add the uncooked basmati rice to the pot and stir to coat. Cook for 2-3 minutes, allowing the rice to toast slightly.
- Simmer the Ingredients:Pour in the vegetable stock (or chicken stock), crushed tomatoes, seasoned salt, smoked paprika, curry powder, thyme, and bay leaf. Stir everything to combine, and bring the mixture to a boil.
- Cook the Rice:Once boiling, reduce the heat to low, cover the pot, and cook for 25-30 minutes, or until the liquid is absorbed and the rice is tender.
- Rest and Finish:Remove the pot from the heat and let it sit, covered, for 10 minutes to allow the rice to rest. Then, remove the bay leaf, stir the rice, and top with chopped parsley before serving.
Notes
- For extra heat, use the full habanero pepper or add chili flakes. Adjust spiciness to your preference.
- This dish is versatile and can be paired with fried plantains, grilled chicken, or sautéed vegetables for a complete meal.
- To keep it vegan, ensure that the vegetable stock is used instead of chicken stock.
