Ingredients
- 1 pound butternut squash or pumpkin cubed
- 1 tablespoon peanut butter
- ¼ teaspoon salt
- ¼ teaspoon ground cinnamon
- ¼ teaspoon ground ginger
- 1 cup water
Instructions
- Cook the Squash: In a medium saucepan, bring 1 cup of water to a boil and add the cubed butternut squash or pumpkin. Cook until the squash is tender when pierced with a fork.
- Add Remaining Ingredients: Once the squash is tender, do not discard the cooking water. Stir in the peanut butter, salt, cinnamon, and ginger. Reduce the heat to low, cover, and simmer for about 3 minutes to allow the peanut butter to meld with the flavors.
- Mash the Squash: Using a fork or traditional whisk, mash the squash until it reaches a smooth, creamy consistency.
- Simmer and Serve: Let the mixture simmer for an additional 5 minutes, then serve hot as a side dish or a comforting main meal.
Notes
- 🥜 Feel free to adjust the amount of peanut butter to your taste.
- 🍯 For a sweeter version, you can add a bit of sugar if the squash isn't naturally sweet.
