Equipment
Ingredients
- Chicken breasts or thighs cut into skewer-sized pieces
- 2 tbsp soy sauce
- 1 tbsp cornstarch
- 2 cloves garlic minced
- 1 tbsp fresh ginger minced
- 2 tbsp brown sugar or sugar substitute, like Swerve
- 1-2 Thai chilies adjust for heat preference
- 1 tsp chili powder
- 1/2 cup tomato sauce
- 1/4 cup finely chopped cilantro
- 2 tsp ground turmeric
- 2 spring onions finely chopped (both white and green parts)
Instructions
- Prepare the Marinade: In a mixing bowl, combine soy sauce, cornstarch, minced garlic, fresh ginger, brown sugar, Thai chilies, chili powder, tomato sauce, chopped cilantro, turmeric, and finely chopped spring onions.
- Marinate the Chicken: Add the chicken pieces to the marinade, making sure each piece is well-coated. You can marinate the chicken overnight for more flavor, or if you’re short on time, cook it immediately.
- Skewer the Chicken: Thread the marinated chicken onto skewers, leaving a small gap between each piece to ensure even cooking.
- Grill the Skewers: Preheat your grill to medium-high heat. Cook the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has a slight char.
- Serve: Once cooked, serve the chicken skewers hot. Garnish with additional cilantro and spring onions if desired. Enjoy the skewers as a main dish, side dish, or as part of a party platter.
Notes
- Marinating Time: For best results, marinate the chicken for at least 30 minutes or overnight.
- Heat Preference: Adjust the amount of Thai chilies or chili powder to make the dish milder or spicier depending on your taste.
- Serving Suggestions: Serve with a side of couscous, grilled vegetables, or a fresh salad for a complete meal.
