Equipment

Ingredients

  • Chicken breasts or thighs cut into skewer-sized pieces
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 2 cloves garlic minced
  • 1 tbsp fresh ginger minced
  • 2 tbsp brown sugar or sugar substitute, like Swerve
  • 1-2 Thai chilies adjust for heat preference
  • 1 tsp chili powder
  • 1/2 cup tomato sauce
  • 1/4 cup finely chopped cilantro
  • 2 tsp ground turmeric
  • 2 spring onions finely chopped (both white and green parts)

Instructions

  • Prepare the Marinade: In a mixing bowl, combine soy sauce, cornstarch, minced garlic, fresh ginger, brown sugar, Thai chilies, chili powder, tomato sauce, chopped cilantro, turmeric, and finely chopped spring onions.
  • Marinate the Chicken: Add the chicken pieces to the marinade, making sure each piece is well-coated. You can marinate the chicken overnight for more flavor, or if youโ€™re short on time, cook it immediately.
  • Skewer the Chicken: Thread the marinated chicken onto skewers, leaving a small gap between each piece to ensure even cooking.
  • Grill the Skewers: Preheat your grill to medium-high heat. Cook the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has a slight char.
  • Serve: Once cooked, serve the chicken skewers hot. Garnish with additional cilantro and spring onions if desired. Enjoy the skewers as a main dish, side dish, or as part of a party platter.

Notes

  • Marinating Time: For best results, marinate the chicken for at least 30 minutes or overnight.
  • Heat Preference: Adjust the amount of Thai chilies or chili powder to make the dish milder or spicier depending on your taste.
  • Serving Suggestions: Serve with a side of couscous, grilled vegetables, or a fresh salad for a complete meal.
