Ingredients
  

  • 3 Large chapatis
  • 500 g Minced beef
  • 6 Eggs
  • A handful of steamed amaranth (dodo)
  • 2 Small carrots
  • ½ Avocado
  • 1 large green pepper
  • 2 Large onions
  • ½ tsp Ginger
  • ¼ cup Parsley, finely chopped
  • 1 Large tomato, finely chopped
  • Black pepper to taste
  • Salt to taste
  • Oil for frying

Instructions
 

Prepare the Minced Beef:

  • Finely chop one onion, one carrot, and half a green pepper, then set them aside.
  • Heat about a tablespoon of oil in a pan over high heat. Add the grated ginger and chopped onions. Sauté until the onions become translucent.
  • Add the minced beef to the pan and stir well. Cover and cook for 10 minutes.
  • Remove the cover, stir, and add the chopped tomatoes. Cook until the tomatoes are tender.
  • Add the chopped green pepper, carrot, salt, and black pepper. Stir well, cover the pan, and cook until the meat is fully cooked and all the liquid has evaporated.
  • Once done, remove the minced beef from the heat and set aside.

Prepare the Vegetables and Eggs:

  • Thinly slice the remaining onion and green pepper. Set them aside.
  • Shave the remaining carrot using a peeler or grater. Set aside.
  • In a mixing bowl, whisk two eggs. Heat a little oil in a frying pan over medium heat and pour in the eggs. Fry until the eggs are almost golden brown. Repeat this process until you have three large fried eggs.

Assemble the Rolex:

  • Place one chapati on a plate or board.
  • Layer one fried egg on top of the chapati.
  • Add a portion of the minced beef on top of the egg.
  • Layer the steamed amaranth, shaved carrot, sliced green pepper, onion, and thinly sliced avocado on top of the minced beef.
  • Gently roll the chapati from one end to the other while pressing down to make sure it is firm.

Serve:

  • Cut the rolled chapati into halves or smaller rolls if desired.
  • Serve warm with a lemon wedge on the side.
