Maraq Fahfah (Somali Soup)
Maraq Fahfah is a hearty Somali soup featuring tender meat, vegetables, and warming spices. This traditional dish, with its roots in Somali and Djiboutian cuisine, is perfect for a comforting meal. Typically served with lahooh, rice, or bread, it showcases the rich flavors of East African culinary traditions.
Ingredients
- 450 g lamb goat or beef meat cubed
- 2 beef stock cubes
- 1.5 l water
- 3 medium potatoes peeled and chopped
- 2 carrots chopped
- 1/2 head cabbage chopped
- 1 tomato chopped
- 1 small onion chopped
- 2 garlic cloves chopped
- 2 tbsp coriander leaves chopped
- 2 tsp ground coriander
- 1 green chilli finely chopped
- juice of 1/2 lemon
- salt and ground pepper
Instructions
Cook the Meat:
- In a large cooking pot, add the cubed meat and crumble in the beef stock cubes.Pour in 1.5 liters of water, bring to a boil, and then reduce to a simmer.Cook for about 80 minutes, or until the meat is tender.
Add the Vegetables:
- Once the meat is tender, add the chopped potatoes, carrots, and cabbage to the pot.Return to a simmer and cook for about 15 minutes until the vegetables begin to soften.
Season and Simmer:
- Stir in the chopped tomato, onion, garlic, ground coriander, green chili, and lemon juice.Season with salt and ground black pepper to taste.Cover the pot and let it simmer for an additional 20 minutes, or until all the vegetables are tender and the flavors have melded together.
Serve:
- Ladle the soup into warmed serving bowls.Garnish with fresh coriander leaves.Serve hot, accompanied by lahooh, rice, or bread.
