Ingredients
  

  • 300 g lamb mince
  • 1 brown onion ¾ diced, ¼ leftover
  • 1 garlic clove minced
  • 2 tbsp Madras curry paste
  • 2 tbsp raisins
  • 2 tbsp mango chutney
  • 0.25 tsp Bobotie spice mix
  • 0.5 cups thickened cream
  • 1 egg from pantry
  • 0.5 cups basmati rice
  • 1 carrot sliced into ½ cm rounds
  • 60 g peas
  • 0.5 broccoli cut into bite-sized florets

Instructions
 

  • Prepare Ingredients:
    Preheat oven to 180°C.Peel and dice ¾ of the onion and mince the garlic.
    Slice the carrot into ½ cm rounds and cut the broccoli into bite-sized florets.
    Bring a pot of water to boil for cooking the vegetables later.
  • Brown the Mince:
    Heat oil in a pot over medium heat.
    Add the diced onion, garlic, curry paste, and Bobotie spice mix. Sauté for about 3 minutes until fragrant and the onion softens.
    Add the lamb mince and raisins, breaking the mince apart with a spoon. Cook for 5 minutes, or until browned all over.
    Stir in the peas, check seasoning, and transfer the mixture to an oven-proof dish.
  • Prepare and Add the Royale:
    In a small bowl, whisk together the thickened cream and egg to make a royale.
    Pour the mixture over the lamb mince and season with salt and pepper.
    Bake in the oven for 15-20 minutes, or until the top is golden brown and the egg mixture is set.
  • Cook the Rice:
    Bring 1½ cups of water to a boil in a pot.
    Stir in the basmati rice, cover, and reduce the heat to low. Simmer for 15 minutes, until all the water is absorbed.
    Fluff the rice with a fork. If it is too firm, add a few more tablespoons of water, cover, and let it absorb off the heat.
  • Cook the Vegetables:
    Add the carrot slices to the pot of boiling water. After 1 minute, add the broccoli.
    Cook for 1 more minute, or until the broccoli is bright green and tender to your liking.
  • You Plate It:
    Divide the rice between plates and top with the baked Bobotie.
    Serve with mango chutney on the side, along with the steamed carrots and broccoli. Enjoy!
