Equipment
- Pot (for boiling water)
Ingredients
- 300 g lamb mince
- 1 brown onion ¾ diced, ¼ leftover
- 1 garlic clove minced
- 2 tbsp Madras curry paste
- 2 tbsp raisins
- 2 tbsp mango chutney
- 0.25 tsp Bobotie spice mix
- 0.5 cups thickened cream
- 1 egg from pantry
- 0.5 cups basmati rice
- 1 carrot sliced into ½ cm rounds
- 60 g peas
- 0.5 broccoli cut into bite-sized florets
Instructions
- Prepare Ingredients:Preheat oven to 180°C.Peel and dice ¾ of the onion and mince the garlic.Slice the carrot into ½ cm rounds and cut the broccoli into bite-sized florets.Bring a pot of water to boil for cooking the vegetables later.
- Brown the Mince:Heat oil in a pot over medium heat.Add the diced onion, garlic, curry paste, and Bobotie spice mix. Sauté for about 3 minutes until fragrant and the onion softens.Add the lamb mince and raisins, breaking the mince apart with a spoon. Cook for 5 minutes, or until browned all over.Stir in the peas, check seasoning, and transfer the mixture to an oven-proof dish.
- Prepare and Add the Royale:In a small bowl, whisk together the thickened cream and egg to make a royale.Pour the mixture over the lamb mince and season with salt and pepper.Bake in the oven for 15-20 minutes, or until the top is golden brown and the egg mixture is set.
- Cook the Rice:Bring 1½ cups of water to a boil in a pot.Stir in the basmati rice, cover, and reduce the heat to low. Simmer for 15 minutes, until all the water is absorbed.Fluff the rice with a fork. If it is too firm, add a few more tablespoons of water, cover, and let it absorb off the heat.
- Cook the Vegetables:Add the carrot slices to the pot of boiling water. After 1 minute, add the broccoli.Cook for 1 more minute, or until the broccoli is bright green and tender to your liking.
- You Plate It:Divide the rice between plates and top with the baked Bobotie.Serve with mango chutney on the side, along with the steamed carrots and broccoli. Enjoy!
