Hazelnut Assida(Hazelnut Cream)
A creamy, smooth Tunisian dessert made from hazelnuts, perfect for family gatherings during Ramadan or special occasions like the Prophet’s birthday.
Equipment
- Food processor (for hazelnut paste)
Ingredients
- 125 g hazelnut paste homemade or store-bought
- 550 ml milk
- 100 g sweetened condensed milk
- 35 g all-purpose flour
- 50 g granulated sugar
- Ground nuts for decoration optional
Instructions
- Prepare Hazelnut Paste:Roast the hazelnuts until golden brown. While still hot, rub them to remove the skin.Place the roasted hazelnuts in a food processor and blend until smooth to form a hazelnut paste. Set aside.
- Blend Ingredients:In a blender, combine the hazelnut paste, milk, sweetened condensed milk, sugar, and flour. Blend until the mixture is smooth and homogeneous.
- Cook the Mixture:Pour the blended mixture into a large pan and cook over moderate heat. Stir continuously to prevent lumps and ensure even cooking.Continue stirring until the mixture thickens slightly, becoming creamy but less thick than custard.
- Add Sugar & Boil:Once the mixture begins to thicken, add additional sugar to taste. Stir well and let the mixture gently boil for a few minutes, continuing to stir.
- Pour & Serve:Remove from heat and while still hot, pour the mixture into small bowls or cups.Decorate with ground nuts for extra texture and flavor.
- Enjoy:Serve warm or at room temperature and enjoy this delightful Tunisian dessert!
Notes
- Make-Ahead Option: Hazelnut cream can be stored in the refrigerator for up to 3 days. Gently reheat before serving.
- Customization: You can adjust the sugar level to taste or substitute with honey for a different flavor twist.
