Ingredients
- 1 1 small onions sliced into half-moons
- 3 cloves garlic crushed
- 1 green bell pepper chopped
- vegetable oil
- 1 1/2 lbs lbs beef cubed (about 1/2" pieces)
- 1 cup beef broth (more as needed)
- 3 carrots peeled and sliced
- 2 yellow potatoes cubed
- chili peppers chopped (optional, for heat)
- 1 handful fresh cilantro chopped or torn
- Salt and pepper to taste
Instructions
Sauté the Aromatics:
- Heat the vegetable oil in a large skillet or pot over medium heat.Add the sliced onion, crushed garlic, and chopped bell pepper.Sauté until the onions are soft and translucent, and the aroma fills your kitchen, about 5-7 minutes.
Cook the Beef:
- Add the cubed beef to the skillet, stirring well to combine with the sautéed vegetables.Pour in 1 cup of beef broth, then add the sliced carrots and cubed potatoes.Stir in the optional chili peppers if you prefer some heat.
Simmer the Suqaar:
- Reduce the heat to low, cover, and let the mixture simmer for about 30 minutes, stirring occasionally.The broth will gradually thicken into a rich gravy as it cooks. Add more broth if necessary to keep the mixture from drying out.Continue cooking until the beef is tender and the vegetables are fully cooked.
Finish and Serve:
- Once the beef is tender and the sauce has thickened, season with salt and pepper to taste. Garnish with chopped fresh cilantro before serving.
