African Grilled Chicken, also known as Kati Kati, is a flavorful dish from Cameroon. This dish involves grilling chicken pieces and then simmering them in a savory tomato sauce. The result is tender, smoky chicken infused with rich spices—a perfect companion to traditional sides like fufu and njama njama.

- 4 lb chicken skin-on, cut into desired pieces
- 1 1/4 tsp salt
- 1 tbsp onion powder
- 1 1/2 tbsp garlic powder
- 1 tsp white pepper
- 1/2 tsp cayenne pepper
- 1 tsp bouillon powder (optional, can replace with salt)
Sauce
- 2 fresh tomatoes
- 1/2 cup water or more as needed
- Chicken bouillon to taste
Instructions
- Prepare the Chicken:Trim excess fat from the chicken and pat dry with a cloth or paper napkin.In a small bowl, mix together the salt, onion powder, garlic powder, white pepper, cayenne pepper, and bouillon powder.Rub the spice mixture evenly over the chicken pieces.
- Grill the Chicken:Preheat your barbecue, grill, griddle, or frying pan to medium-high heat.Lightly coat the grill with cooking spray.Place the seasoned chicken on the grill and cook for about 20-30 minutes, turning occasionally, until browned and almost cooked through.
- Prepare the Tomato Sauce:Blend the fresh tomatoes into a puree and set aside.Heat a large saucepan over medium heat, then add palm oil (or any cooking oil).Add the tomato puree and sauté for about 4-5 minutes, stirring occasionally.
- Combine Chicken and Sauce:Transfer the grilled chicken to the saucepan with the tomato sauce.Add about ½-1 cup of water, cover, and simmer over low heat for 4-5 minutes, occasionally spooning the sauce over the chicken.Ensure the chicken is thoroughly cooked and flavored with the sauce. Adjust seasonings if necessary.
- Serve:Remove from heat and serve warm with fufu and njama njama or any preferred sides.
