
West African-Style Chicken Peanut Stew Recipe By Tesco Real Food
Ingredients
- 2 tbsp olive oil
- 1 onion, sliced
- 2 medium sweet potatoes, peeled and diced
- 1 red pepper, chopped
- 80 g smooth peanut butter
- 1 reduced-salt chicken stock cube, made up to 450ml
- 600 g skinless and boneless chicken thigh fillets, cut into bite-sized pieces
- 2 garlic cloves, crushed
- 5 cm piece ginger, peeled and grated
- 1/2 tbsp ground coriander
- 1/2 tbsp ground cumin
- 1 tbsp crushed chillies
- 30 g fresh coriander
- 30 g peanuts, roughly chopped (optional)
- cooked basmati rice
