MATOKE ya Nyama ya Kusaga By Asya In the Kitchen


Matoke is an East African staple dish made from green bananas. The perfect bananas for Matoke are normally short and thick compared to other types of bananas.
There are different ways of making matoke, you can simply boil & mash it as an accompaniment for other dishes or you can make a one pot meal out of it by mixing it with other foods to make a complete meal out of it.
¼ kg Beef, cut in small cubes
5 Green bananas, peeled & cut in chunks
1 carrot, diced
1 cup cauliflower florets
1 green pepper, chopped
1 red onion, chopped
1 tomato, chopped
1 tbsp Tomato paste
1 tsp Curry powder
1 tsp crushed Garlic
½ tsp chilli flakes
½ cup Coriander
2 tbsp Vegetable oil
salt to taste
