South Sudan Kofta with Spicy Tomato Sauce By Naptime Prep Cook

A kofta by any other name is just a meatball. Although they’re usually more oval-shaped. These South Sudanese kofta are spiced with cumin, coriander and cinnamon then the sauce gets a kick from a Serrano pepper. Serve these with plenty of bread (like the pitas we used) to sop up all that spicy sauce.

For the sauce
 1 tbsp olive oilor vegetable oil
 1 medium onion, diced (minus the 2 Tbs. from the kofta)
 2 garlic cloves, crushed or grated
 ¼ tsp Black pepper
 ½ tsp Coriander seedstoasted then ground
 ½ tsp Cumin
 4 large tomatoes, diced
 1/2 cup unseasoned tomato sauce
 Saltto taste
 1 Serrano pepper, finely diced
For the kofta
 1 lb. ground beef
 2 Tbs. onion, finely diced
 1/2 cup of cooked rice
 1/2 tsp. black pepper
 1 tsp. Coriander seeds, toasted then ground
 1 tsp. Ground cumin
 1/4 tsp. Ground cinnamon
 1 tsp. Salt
 3 Tbs. oil, for frying
