Jollof rice is a common staple dish loved by many different cultures in Western/Sub-Saharan Africa. It is most commonly considered a Nigerian or Ghanaian recipe but is also common in Mali, Senegal, Gambia, Liberia, and many other countries in the region.

Kwame Onwuachi, the former Top Chef contestant who recently opened Kith and Kin in Washington, D.C., shares his recipe for Nigerian jollof rice.

Ingredients
  

  • 1 tablespoon minced ginger
  • 1 tbsp Jamaican curry powder
  • 1 tsp dried crayfish
  • 10 garlic cloves
  • 3 Maggi beef bouillon cubes
  • 2 medium plum tomatoes,
  • 1 red bell pepper
  • 1 red onion, roughly chopped
  • 1 habanero, stemmed
  • 3 tbsp red palm oil
  • 3 cup purée
  • 4 cup basmati rice
  • 2 tsp kosher salt
  • 6 cup water
