  • 1 small stock cube
  • ¼ teaspoon salt (optional)
  • 1 teaspoon dry cayenne pepper seeds

Directions

  1. Grind the Cloves: Use a dry mill to grind the cloves.
  2. Make Garlic-Ginger Paste: Peel and pound/grind the garlic and ginger into a smooth paste.
  3. Mix Spices and Seasoning: Add the ground cloves, crushed stock cube, and some water to the paste. Stir, sieve, and get the spice extract.
  4. Add Suya Spice and Cayenne: Include the suya spice and cayenne pepper seeds in the solution, stir, and set aside.

Making Kilishi:

  1. Prepare the Beef: Cut the beef into very thin fillets, ensuring all fat is removed.
  2. Preheat the Oven: Set your oven to 250°C (475°F) or the highest setting.
  3. Season the Beef: Lightly sprinkle salt on the beef fillets and lay them flat on a baking sheet in the oven tray.
  4. First Bake: Bake for 15 minutes, flipping every 5 minutes for even drying.
  5. Apply the Spice Mix: After 15 minutes, remove the beef and brush it generously with the Kilishi spice solution on both sides.
  6. Final Bake: Bake for an additional 10-15 minutes. Keep an eye on it to achieve the perfect dry yet chewy texture. Remember, it will dry further once cooled.
