Sweet Semolina Cake- This is the most beloved cake of people all around the eastern Mediterranean basin! The syrup infused cake is extremely popular in the Middle East, the Balkans and on the Horn of Africa. The name is different in all these regions. For the syrup
 900 ml water
 1200 g granulated sugar
 2 tbsp honey
 lemon peel, of 1 lemon
For the cake
  1 1/2 g mastic
 8 eggs
 250 g butter, melted
 200 g semolina
 200 g soft flour
 2 tbsp baking powder
 lemon zest, of 1/2 lemon
