Almond Vegetable Stew  - Efo elegusi is one of the most popular, delicious and nutritious Nigerian stews or soups. The name is derived from the two main ingredients, vegetables (efo) and melon seeds (egusi). 

In this recipe, we successfully substitute ground melon seed (egusi) with ground almond and the result is DELICIOUS, as in YUMMIELICIOUZ! Rich in Vitamins, Minerals, Omega 3 & 6 Fatty acids - this particular style of efo is highly fortified and well garnished with iron-rich vegetables and beef. This vegetable (efo) can be served with different types of main food, such as, but not limited to: pounded yam, amala (yam/cassava flour), eba (garri/cassava granules), oat meal swallow, fufu, plantain fufu, rice, boiled plantain, roasted plantain, yam and so on.

 500 g spinach
 180 curly kale
 Assorted meat(beef, tripe, abodi, cow foot/skin) etc
 Smoked turkey
 Boiled mackerel fish
 ½ cup fish stock
 5 bell peppers
 4 sweet peppers
 2 scotch bonnet
 1 red onion(1/2 blended and 1/2 diced)
 1 tsp sea salt(salt to taste)

 Assorted meat(beef, tripe, abodi, cow foot/skin) etc
 Smoked turkey
