This Mango and Cucumber Salad is as easy at cutting up some produce, adding some spices, and mixing it all together.

 1 English cucumberthinly sliced
 1/2 small red onionfinely chopped
 ½ tsp salt
 1 garlic cloveminced
 1 tsp peanut oil
 2 cups chopped seeded tomato
 1 red or green jalapenoseeded and minced
 ¼ tsp cumin
 2 champagne mangoespitted and diced
 1 tbsp chopped cilantro
 3 tbsp fresh lime juice
