Bhaji’ is a generic term used for a dry vegetable dish. A bhaji could be made using any and every kind of vegetable, but let’s talk a little about the omnipresent and widely consumed vegetable – potato. A potato bhaji is to vegetable dishes, what ‘classic salted’ chips are to other Lays variants – the simple and classic. To make this simple preparation all you need is some boiled potatoes, essential spices, chilies, and onion.

Bhajias, East African Snack, enjoyed especially in Kenya and Tanzania, a cultural import from the Indians dipped in a thick gram flour paste of spices ,herbs and fried until crispy.

 2 large potatoes sliced thinly
 ½ cup gram flour
 1 tsp minced ginger
 12 tsp spice cuminor coriander or carom seeds
 ¼ cup or more fresh herbs coriander, parsley or cilantro
  cup water plus more
 ½ tsp salt or more adjust to taste

Ingredients
