 4 tbsp olive oil
 1 large onion, chopped
 ¼ tsp cumin
 2 jalapeño peppers, diced
 2 cloves of garlic, minced
 2 large tomatoes, chopped (2 cups canned tomatoes)
 3 tbsp tomato paste
 2 cups parboiled rice, rinsed
 2-3 cups vegetable stock (or water)
 2 tbsp juice of lime
 Salt to taste
 1/4 cup cilantro, for garnish
